Slow Cooker Blueberry Cobbler

Looking for a classic cobbler dessert recipe without lots of time in the kitchen? Try my easy Slow Cooker Blueberry Cobbler that comes together in 10 minutes time and cooks for 2.5 hours in the slow cooker. This blueberry cobbler recipe is deal for entertaining with ease.

Summer is in full swing and blueberries are in season! What better way to use them up then to make my slow cooker blueberry cobbler! The best part is that it takes only 10 minutes to prep and only two and a half hour to cook in the slow cooker. I like to make cobbler in the slow cooker when I know I have guest coming over for dinner. I can quickly prep dessert and it will be done in time for my guest to enjoy! All you have to do is scoop out the cobbler and add a scoop of vanilla ice cream! This is one of my favorite summer time treats.

Ingredients

Ingredients: Blueberries, eggs, sour cream, cinnamon, baking powder, flour, sugar, lemon, vanilla extract, and milk.
  • Blueberries – I like to use fresh blueberries, but in a pinch you can use frozen. See notes below.
  • Dairy – This recipe requires both milk and sour cream.
  • Flour – This will be the base of the batter. I have only tested this recipe using all purpose flour.
  • Sugar – You’ll need a little sugar for the batter and the remaining to mix into the blueberries.
  • Baking Powder- Will help the cobbler rise.
  • Cinnamon – A little cinnamon gives the recipe a nice warm balance of flavors.
  • Vanilla Extract – A splash of vanilla extract gives extra flavor to the batter.
  • Eggs – The eggs go in the batter.
  • Lemon – I use both the zest and juice of a lemon to mix with the blueberries.

Directions

Mix together the flour, ¼ cup sugar, baking powder, cinnamon, vanilla extract, sour cream, milk, and eggs. Mix for 30 seconds until batter is creamy and no lumps are present. 

Spray the slow cooker with non-stick cooking spray and pour the batter into the slow cooker, spreading the batter evenly on the bottom.

Wipe out the batter bowl. Then, gently mix together the 3 cups fresh blueberries, 1 cup sugar, lemon juice, and lemon zest.

Pour the blueberry mixture on top of the batter in the slow cooker. Place the lid on the slow cooker and cook on HIGH for 2-½ hours.

Can I reduce the amount of sugar in this recipe?

You might think that a cup of sugar is way too much for the blueberries. I promise it’s not. Go with your gut and follow the recipe as its intended. You’ll be happy you did. I promise!

Can I use frozen blueberries for this recipe?

I like to use fresh blueberries for this recipe since they are in season. However, if you want to make this recipe when blueberries are not in season you can also use frozen. Either way works well.

How many people does this blueberry cobbler recipe feed?

This recipe feeds at least 8 large portions of blueberry cobbler; however, I have stretched this to get around 12-16 with smaller scoops. Think of it as a little tasting.

Here are a few of my tips and tricks when making crockpot blueberry cobbler.

  • Slow Cooker Desserts – Whenever you make a dessert in the slow cooker you risk the moisture falling into the dessert. To prevent this, as soon as the recipe is done cooking simply remove the lid as quick as possible preventing the moisture from dripping on to the cobbler.
  • Blueberries – If fresh blueberries aren’t in season you can use frozen.
  • Toppings – Vanilla ice cream is a must to go along side of your cobbler. I also like to add whipped cream and some sliced almonds on top.
