Since being stuck at home 24-7 and limiting our eating out I’ve started making some of the fancier dishes I would normally eat out. One that I recently mastered is this recipe for Grilled Skirt Steak with Chimichurri Sauce. You guys, it’s so easy to make at home. Not nearly as scary as you might have imagined. I’m here to walk you through the process on how to make Chimichurri Steak at home!

Ingredients

Here are all the ingredients you’ll need to make this grilled steak recipe.

  • Mazola Corn Oil
  • Flat Leaf Parsley
  • Cilantro
  • Garlic Cloves
  • Oregano Leaves
  • White Wine Vinegar
  • Kosher Salt
  • Black Pepper
  • Red Pepper Flakes
  • Skirt Steak

Directions

This recipe is broken down into three parts; how to make Chimichurri marinade, how long to marinate steak, and how to cook skirt steak.

Chimichurri Marinade

Making chimichurri sauce is actually very easy. There are 3 different ways to make it.

  • By hand – chopping and using a mortar and pesol to grind the ingredients together.
  • Food processor – this is the way I prefer to make the sauce. I like to place all the ingredients in the food processor and blend for 10 seconds. Stop, remove the lid, scrape down the sides and pulse for 1-2 seconds longer until I get my desired consistency.
  • Blender – making blender chimichurri sauce is really easy. However, I find with this method it will be smooth with out the small pieces of fresh herbs. So if you like a smoother sauce this might be the preferred method for you!

For the Chimichurri Sauce: place the Mazola Corn Oil, fresh parsley, fresh cilantro, garlic cloves, oregano, white wine vinegar, salt, black pepper, and red pepper flakes in a food processor. Blend for 10 seconds.

Then pulse until desired consistency (about 2-5 pulses depending on food processor). *You don’t want it to be pureed but want to be able to recognize that theirs herbs in the sauce.

How long to marinate steak

Place the skirt steak in large glass dish. Pour half the chimichurri sauce on top of the steak. Massage the sauce all over the top and bottom of the steak.

Cover with a lid or plastic wrap and refrigerate for 8-12 hours. Reserve the remaining sauce in a container fitted with a lid.

How to Cook Skirt Steak

Once the steak is marinated, preheat the grill to 450 degrees Fahrenheit. Pat the steak dry of the marinade. Spray the grill with a non-stick grilling spray.

Lower the heat to medium-low.

Place the steak on the grill. Grill for 5 minutes, turning once and grill another 3-5 minutes. Skirt steak is best served medium-rare to medium at the very most.

Remove the steak from the grill. Let it rest for 5-10 minutes.

Thinly slice against the grain of the steak. Divide evenly among plates and enjoy with additional chimichurri sauce on top.

Tips & Tricks

Here are a few of my favorite tips and tricks when making this recipe.

  • Time – Make sure you plan ahead to make the chimichurri sauce early so you can marinate the meat. The meat needs 8-12 hours to marinate.
  • Grill Spray – I love to use a non-stick cooking spray made for the grill. This will help prevent your meat from sticking to the grill.
  • Hot Grill – In order to get a nice sear and char on your steak and those lovely grill marks you’ll want to make sure you have a screaming hot grill.

How much does this steak recipe make?

This recipe makes enough for 6 hungry adults.

What do you eat chimichurri sauce with?

Chimichurri pairs best with steak. But we also like to pair it with fish, pork, and even chicken! The fresh bold flavors compliment just about any protein you’ll make!

What oil should I use to make chimichurri?

Whenever you are making a marinade you always want to use a neutral oil. This means the oil has no tastes or flavor to it. It is neutral and picks up the flavors you give it! Mazola Corn Oil is a heart-healthy* cooking oil and creates marinades that make great-tasting food because it has a neutral taste that lets the natural flavor of your food stand out. In this case that is the chimichurri sauce.

So remember, when you are making chimichurri or really any marinade you should select a neutral cooking oil to let the flavors of the marinade stand out.

What oil has a high smoke point?

Mazola Corn Oil has a high smoke point 450˚ F. This means it’s great for grilling!

What herbs do you use for chimichurri sauce?

Chimichurri is made with the following fresh herbs; Flat Leaf Parsley, fresh Cilantro, and Oregano Leaves.

Does chimichurri go bad?

Yes, chimichurri sauce goes bad after a few days. It’s essentially pureed fresh herbs and will only last 3 days at best when refrigerated. Don’t worry you probably won’t have any leftover since the sauce is so addictive!

How long to marinate steak?

Steak needs 8-12 hours to marinate. So make sure you plan ahead.
