Southern Breakfast Potatoes

Southern Style Breakfast Potatoes are a mix of white potatoes and sweet potatoes that are par-boiled then fried in a skillet with butter, onions, and seasonings. These potatoes are made in about 45 minutes from start to finish and make for the perfect breakfast side dish.

My husband and I LOVE breakfast! Years ago we ate at White Wolf Cafe here in Orlando, Florida. We both fell in love with their home fries, and I immediately knew that I had to try to recreate their delicious breakfast potatoes at home. Their Southern Breakfast Potatoes are a perfect mix of white potato and sweet potato. 

Growing up I never ate sweet potatoes, but now that I’m older I love sweet potatoes. I also love mixing in sweet potatoes to the traditional Fried Breakfast Potatoes. Give this recipe for Southern Style Breakfast Potatoes a try the next time your making a big Sunday breakfast.

Ingredients

Ingredients on counter: two sweet potatoes, a dozen red potatoes and seasonings.
  • Potatoes – For this recipe I use a mix of red potatoes (not peeled) and sweet potatoes (peeled).
  • Butter – You will want some butter to fry the potatoes. The butter gives them a nice crust.
  • Onion – I like to use a little bit of fresh onion to this recipe.
  • Spices – I use a mix of season salt, black pepper, dill, and parsley. I feel that the dill really compliments the sweet potato.

How do you make breakfast potatoes from scratch?

Wash and dice red potatoes. Place in a sauce pan, salt the water well, and boil on high for 20 minutes.

While the red potatoes are cooking wash, peel, and dice the sweet potato. Add the sweet potatoes once the white potatoes have gotten to the 10 minute mark. Boil until al dente.

During the last few minute of cooking melt the butter in a large frying pan on medium/low heat (making sure the butter does not brown).

Drain the potatoes and add them directly the frying pan, add the onion on top, and all the spices. Let it sit in the pan on medium heat for a good minute or two before mixing. Cook until crust has formed on potatoes!

How many people do these sweet potato breakfast potatoes feed?

I created this sweet potato breakfast potatoes recipe to be able to host brunch, and serve at least 8 hungry adults. You can easily scale down the recipe to make less by cutting the potatoes in half.

Do sweet potatoes and regular potatoes cook the same?

Yes sweet potatoes do cook like regular potatoes, but cook in less time. For this recipe you will notice you start by boiling the white potatoes and then add in the sweet potatoes.

Do you peel sweet potatoes before cooking?

It depends on what way you cook them. For this breakfast home fries recipe I do peel them first. However, if you are simply steaming or roasting the sweet potatoes whole you do not need to peel the sweet potatoes.

Are sweet potatoes harder than regular potatoes?

Yes, sweet potatoes are much harder to cut. The main reason sweet potatoes are so hard to cut is because they’re much denser than a regular potato. They resemble the consistency of a carrot or butternut squash.

Tips & Tricks for Sweet Potato Home Fries

  • Potatoes – You can use 12 small red potatoes or 6 large.
  • Onions – If you don’t have fresh onions on hand you can use frozen diced onions or even dried onion flakes.
  • Dairy Free – If you are on a dairy free diet, substitute dairy butter for non-dairy butter.
  • Gluten Free – Good news, these country style potatoes are naturally gluten free!
  • Serving Size – If you aren’t feeding a large crowd or don’t want a lot of leftovers you can cook 6 small red potatoes and only 1 sweet potato.

  • ½ White Onion
  • ½ stick Unsalted Butter
  • 1 teaspoon Dried Dill
  • 1 teaspoon Dried Parsley

  • 1 teaspoon Season Salt

Instructions

  • Wash and dice red potatoes. Place in a stock pot, salt the water well, and boil on high for 20 minutes.
