This Strawberries and Cream recipe is a family favorite in my home. This naturally gluten free no-bake dessert is made with fresh strawberries, sugar, and heavy cream. The entire recipe comes together in about 10 minutes time.

My husband grew up eating Strawberries and Cream. I on the other hand did not know about this amazing and easy-to-make dessert until I was an adult, and my now mother in-law made it for me. I’ll be honest. I was skeptical at first, but after my first bite I was sold. Now whenever we have an abundance of strawberries in our home I know I have to make Strawberries and Cream for my family.

Ingredients

Recipe ingredients: strawberries, sugar, and heavy cream
  • Strawberries – For this recipe you need fresh strawberries. This recipe will not work with frozen and then thawed.
  • Sugar – I like to use a tablespoon of granulated sugar; however, you can use less if you don’t want your cream as sweet.
  • Cream – Heavy whipping cream is what you’ll need for the cream portion of this recipe. Half and half or other milks will not work. You must use heavy cream.

Directions

Wash: Wash and pat dry the strawberries. Then, cut the tops off the strawberries and quarter.

Mix: Place the strawberries in a large bowl. Once all the strawberries are cut pour the sugar on top and mix.

Then, pour in heavy cream. Carefully mix until all strawberries are coated.

Place plastic wrap on top of the bowl and refrigerator for at least one hour or up to 24 hours. Eat immediately.

What do strawberries and cream taste like?

Imagine eating fresh strawberries that are mixed with whipped cream. The only difference is that the cream is still in the liquid form and not so much in a thicker form.

What is fresas con crema?

Fresas con crema or known in English as strawberries and cream. It is a popular Mexican dessert that uses 6 ingredients (a little more complex as a the American version). You will combine fresh sliced strawberries mixed with sour cream or Greek yogurt, evaporated milk, heavy cream, sweetened condensed milk and vanilla extract. The Mexican fresas con crema has much more cream then my American version of strawberries and cream.

Tips & Tricks

Here are a few of my favorite tips and tricks I’ve learned when making this Strawberries and Cream recipe.

  • Refrigeration Time – I have written this recipe for the strawberries to refrigerate for at least an hour. However, if you don’t have an hour to wait or simply want to eat the strawberries and cream immediately you can. However; the cream might not be as sweet and full of the strawberry flavor. Letting the strawberries sit for an hour allows the sugar to break down the strawberries and letting out some of their juices.
  • Heavy Cream – I have never tried this recipe using anything other then heavy cream. I think it’s crucial for the rich thick cream flavors.
  • Strawberries – This recipe only works with fresh strawberries. Do not try using frozen strawberries. They will not hold up to the cream and will just be mushy.
  • Leftovers – If you have any leftover Strawberries and Cream store in an airtight container in the refrigerator for up to 1-2 days at most.
