I wasn’t sure if my husband was going to go for fruit with his chicken but after his first bite he was gobbling it up. He loved it and actually went for seconds and even thirds of the strawberry mozzarella topping. Who knew pairing chicken with strawberries would taste so good? This has become my go-to for summer entertaining or whenever strawberries happen to be in season!

Ingredients
- Chicken – I like to use boneless, skinless chicken breast; however, you could also use chicken thighs.
- Seasoning – For this recipe I use my go-to chicken seasoning; McCormick Garlic & Herb Seasoning.
- Oil – I like to use a little olive oil in the bruschetta topping.
- Strawberries – A pint of strawberries will do for this recipe. Make sure to chop them into bite-size pieces.
- Basil – Fresh basil is what makes a bruschetta complete and compliments the strawberries.
- Mozzarella – Fresh mozzarella cheese works best for this recipe. Make sure to chop it into bite-size pieces.
- Balsamic Glaze – This recipe calls for balsamic glaze. You can make your own or simply use my strawberry balsamic dressing recipe to give this recipe even more notes of strawberry flavoring.
Directions
First, preheat the grill on high heat.
While the grill heats, rinse and pat dry the chicken breast. Drizzle with 1 tablespoon olive oil on top and season with McCormick Garlic & Herb Seasoning. Set to the side.
Pro Tip – You can do this up to a day in advance–the longer the garlic and herb seasoning sits on the chicken the more flavorful your chicken will be.
Rinse, slice stems, and dice strawberries. Place in a bowl. Then add dice the fresh mozzarella cheese and chiffonade the basil leaves. Drizzle 1 tablespoon olive oil on top and mix well. Place in the refrigerator until ready to eat.
Reduce the heat on the grill to low; grill chicken for 15 minutes, turning once until internal temperature reaches 165 degrees Fahrenheit. Remove from the grill and let rest for a few minutes.
Place chicken on a platter. Top with strawberry mozzarella topping and drizzle balsamic glaze over strawberries and chicken. Enjoy immediately.

While fresh strawberries are recommended for their vibrant flavor and texture, you can use frozen strawberries as a substitute if fresh ones are not available. Thaw the strawberries before using them and know that the texture will not be as crisp and more on the mushier side.
Balsamic glaze is readily available at every local grocery store. Look for a smaller bottle that has the word “glaze” on it in the oil and vinegar aisle. It typically comes in a plastic squeeze bottle.
Yes, if you don’t have access to an outdoor grill, you can use a stovetop grill pan or a cast-iron skillet to grill the chicken indoors. Preheat the pan or skillet over medium-high heat and follow the grilling instructions as mentioned in the recipe. Most importantly, make sure the internal temperature of the chicken is at 165 degrees Fahrenheit.
Eight medium strawberries contain more vitamin C than one orange. So just think, your getting a nice little immunity booster while you eat dinner! Strawberries are virtually fat free, contain no cholesterol and are an excellent source of folic acid that helps the body metabolize protein. They are a good source of potassium too.

Here are a few of my tips and tricks when making balsamic grilled chicken.
- Ensure even cooking – To ensure that the chicken cooks evenly, make sure the chicken breasts are of similar thickness. If needed, pound the thicker parts of the chicken breasts to create a more uniform thickness.
- Let it rest – Once the chicken is grilled, allow it to rest for a few minutes before slicing it. This resting period allows the juices to redistribute, resulting in juicier and more tender chicken.
- Fruit – Any berries (raspberries, blueberries, and even blackberries) would work well here. Whatever is in season and looks delicious. I have even used diced fresh peaches or mango to make the fruit bruschetta topping.
- Experiment with toppings – While the strawberry topping is delicious as it is, feel free to experiment with additional ingredients. You can add a sprinkle of feta cheese instead of mozzarella, toasted nuts, or a drizzle of honey to take the dish to another level of flavor complexity.

Hi Marilyn, I use a store-bought balsamic reduction sauce; however, you can make it by bringing equal parts balsamic vinegar and white granulated sugar to a boil then simmering for 15-20 minutes until it reduces and becomes thick.
